Rib Rub
Ingredients:
½ cup onion powder
½ cup garlic powder
½ cup light brown sugar
½ cup paprika
½ cup chili powder
½ cup ground black pepper
⅓ cup ground sage
¼ cup crushed thyme leaves
¼ cup whole celery seed
¼ cup celery salt
¼ cup dry mustard
⅛ cup ground red pepper (cayenne)
¼ cup seasoning salt
¼ cup meat tenderizer
¼ cup salt
¼ cup lemon pepper seasoning
¼ cup Old Bay Seasoning
Preparation:
Blend all ingredients together thoroughly in large bowl. Mix well and store in an airtight container inside the fridge. This rub recipe is for slow cooking (smoking or the oven method). It is best if you apply the rub on both sides of the ribs (liberally, don’t be shy) the night before and keep in an airtight container until about an hour before cooking.
This is great on brisket or pork shoulder also. When rubbing on chicken or turkey make sure to rub under the skin and make slits into the meat for added flavor.
Smoke Method
Apply rub to ribs 1-12 hours before cooking. Soak desired type of wood chips 2-4 hours before cooking. Prepare charcoal fire, or if using gas, warm unit to 250°. Set ribs on grill over indirect heat. Cook at 250°for 4 to 5 hours or until tender. Apply smoke chips to coals often throughout cooking process. If using gas grill, put chips in smoke box and replenish as necessary.
