Bo's Barbecue Sauce
Ingredients:
2 tablespoons vegetable oil
1 yellow onion, chopped
2 cloves garlic, finely chopped
2 tsp chili powder
2 tsp dry mustard
1 tsp paprika
¼ tsp cayenne pepper
1 cup bottled chili sauce
1 cup ketchup
1 cup beer
¼ cup molasses
3 tablespoons Worcestershire sauce
3 tablespoons cider vinegar
Preparation:
In a large sauce pan over medium heat, warm the oil. Add the onion and sauté until just softened (about 4 minutes). Add the garlic and sauté for one minute, until fragrant. Stir in the chili powder, mustard, paprika and cayenne. Add the chili sauce, ketchup, beer, molasses, Worcestershire sauce and vinegar.
Simmer, stirring often, until the sauce is lightly thickened, 20-25 minutes. Use the sauce immediately or cover and refrigerate for up to one week. Reheat the sauce before using.
Yield: 3-3 1/2 cups
